  • 500 g Potatoes
  • 4 Carrot
  • 1 Onion
  • 3 cloves Garlic
  • 1000 ml Chicken stock
  • 30 g Butter
  • 1 tbsp Extra-virgin olive oil
  • 1½ tsp Salt
  • ½ tsp Black pepper
  • ½ tsp Smoked paprika (optional)
  • ½ tsp Ground cumin (optional)
  • 80 ml Heavy cream (optional)

Method

  1. Roughly chop the onion, garlic, carrots, and potatoes.
  2. Soften the onion in the butter and oil over medium for 6 minutes. Add the garlic, paprika, and cumin and cook for 1 minute more.
  3. Add the carrots, potatoes, stock, salt, and pepper. Bring up to a simmer.
  4. Cover and simmer for 20 minutes until the vegetables are very tender.
  5. Blitz smooth, then stir in the cream if using. Serve hot.
