About Poulet a l'Estragon
Poulet a l'estragon is a French classic that showcases tarragon, the anise-scented herb that defines so much of the country's cream-sauce cooking. Chicken thighs are browned and then simmered in white wine before being finished with cream, Dijon, and a generous amount of tarragon, whose gentle licorice note is the signature of the dish. It's a lighter, quicker cousin to heavier braises — elegant enough for company but assembled in a single pan in well under an hour.
The sauce is where the pleasure lives: silky and glossy from the cream, sharpened by mustard, and lifted by the distinctive perfume of tarragon that keeps the richness from feeling heavy. Browning the chicken first and softening the shallots in the same pan builds a savory base, and the wine both tenderizes and adds brightness as the chicken simmers through. Because the herb is stirred in near the end, its fragrance stays fresh rather than cooking away. Served over rice or potatoes to soak up the sauce, it's the sort of refined weeknight dinner that tastes like far more work than it demands.
