- 4 Leek
- 180 g White rice
- 20 g Dill
- 1 Lemon
- 5 tbsp Olive oil
- 0.4 tsp Salt
- 1 Onion (optional)
Method
- Slice the leeks and onion into thin rings.
- Sweat the leeks and onion in the olive oil until collapsed and sweet, 10 minutes.
- Stir in the rice, salt, and water and simmer, covered, until tender, 18 minutes.
- Fold through the dill and a squeeze of lemon and rest briefly before serving.
