Ingredients

  • 4 Leek
  • 180 g White rice
  • 20 g Dill
  • 1 Lemon
  • 5 tbsp Olive oil
  • 0.4 tsp Salt
  • 1 Onion (optional)

Method

  1. Slice the leeks and onion into thin rings.
  2. Sweat the leeks and onion in the olive oil until collapsed and sweet, 10 minutes.
  3. Stir in the rice, salt, and water and simmer, covered, until tender, 18 minutes.
  4. Fold through the dill and a squeeze of lemon and rest briefly before serving.
