Ingredients

  • 10 Dumpling wrappers
  • 130 g Shrimp
  • 60 g Ground chicken
  • 8 g Ginger
  • 20 g Chinese sesame paste
  • 2 tsp Light soy sauce
  • 1 tsp Toasted sesame oil
  • 1 tbsp Neutral oil
  • 15 g Chinese chives (optional)
  • 1 tsp Chinkiang black vinegar (optional)

Method

  1. Cut the chives into short lengths and grate the ginger to a pulp.
  2. Chop the prawns to a rough dice and work them into the chicken with the chives, ginger, half the soy and the sesame oil, stirring one way only until the filling turns tacky.
  3. Fill each wrapper generously, wet the rim and pleat it closed along one side, standing them on a floured tray as you go.
  4. Slacken the sesame paste with the rest of the soy, the black vinegar and a spoon or two of warm water until it pours in a thick ribbon, and spread it over the base of the plate.
  5. Heat the neutral oil in a skillet over medium-high and set the dumplings flat-side down in one layer. Fry them until the bases are set and golden.
  6. Pour a thin layer of water straight into the frying pan and clamp the lid on at once — the water has to hit while the bases are still sizzling or the crust steams off. Leave them until the pan runs dry.
  7. Take the lid off and let the last moisture burn away until the bases crackle again when you tilt the pan.
  8. Lift them crisp side up onto the sesame dressing and eat them before the bases go soft.
