Ingredients

  • 200 g Linguine
  • 480 g Shrimp
  • 380 g Cherry tomatoes
  • 22 ml Garlic-infused olive oil
  • 1 tbsp Salt
  • 3 cloves Garlic (optional)
  • 1 Chili (optional)
  • 18 g Parmigiano-Reggiano (optional)
  • 3 tbsp Parsley (optional)
  • ½ tsp Black pepper (optional)

Method

  1. Bring a pot of water to a boil. Salt it.
  2. Halve the cherry tomatoes, mince the garlic, and slice the chilli thin.
  3. Pat the prawns dry and season with salt and pepper. Chop the parsley.
  4. Cook the linguine one minute shy of al dente.
  5. While the pasta cooks, warm the garlic-infused oil in a wide skillet over medium heat with the garlic and chilli until fragrant, about 1 minute. Add the prawns and cook until just pink, about 2 minutes, then lift out.
  6. Add the cherry tomatoes to the same pan and cook until they blister and slump into a rough sauce, about 4 minutes.
  7. Reserve a mugful of pasta water, then drain.
  8. Return the prawns to the pan with the pasta and a splash of pasta water. Toss off heat until glossy.
  9. Finish with the parmesan and parsley.
