Linguine ai Gamberi e Pomodoro

Ingredients
- 200 g Linguine
- 480 g Shrimp
- 380 g Cherry tomatoes
- 22 ml Garlic-infused olive oil
- 1 tbsp Salt
- 3 cloves Garlic (optional)
- 1 Chili (optional)
- 18 g Parmigiano-Reggiano (optional)
- 3 tbsp Parsley (optional)
- ½ tsp Black pepper (optional)
Method
- Bring a pot of water to a boil. Salt it.
- Halve the cherry tomatoes, mince the garlic, and slice the chilli thin.
- Pat the prawns dry and season with salt and pepper. Chop the parsley.
- Cook the linguine one minute shy of al dente.
- While the pasta cooks, warm the garlic-infused oil in a wide skillet over medium heat with the garlic and chilli until fragrant, about 1 minute. Add the prawns and cook until just pink, about 2 minutes, then lift out.
- Add the cherry tomatoes to the same pan and cook until they blister and slump into a rough sauce, about 4 minutes.
- Reserve a mugful of pasta water, then drain.
- Return the prawns to the pan with the pasta and a splash of pasta water. Toss off heat until glossy.
- Finish with the parmesan and parsley.
