About Psari Plaki
Psari plaki is a classic of the Greek table, the everyday way of baking fish that turns up in home kitchens and tavernas across the mainland and islands. The name refers to the plaki style — fish laid in a dish and baked with a tomato-and-onion sauce, olive oil, and herbs — a technique that predates fillet culture and suits the whole, modest fish a coastal cook would have on hand. It's firmly in the Mediterranean idiom of vegetables and good oil doing most of the work, which is why it reads as light, clean, and generous all at once.
The finished dish is soft and juicy: sweet softened onion and garlic, a quick fresh tomato sauce spooned over the fish, and the bright lift of lemon and parsley added at the end. Baking the fillet under its blanket of sauce keeps it from drying out, so it flakes cleanly and stays moist — the sauce is really there to protect and flavor the fish as much as to accompany it. Traditionally it comes to the table warm with plenty of bread to mop the oily, tomatoey juices, and it makes an easy, healthy centerpiece for a weeknight or a relaxed lunch alongside a simple salad or greens.
