  • 100 g Rigatoni
  • 250 g Chicken breast
  • 120 g Cherry tomatoes
  • 2 cloves Garlic
  • 2 tsp Extra-virgin olive oil
  • 20 g Parmigiano-Reggiano (optional)
  • 8 g Basil (optional)

Method

  1. Bring a pot of water to a boil and salt it.
  2. Cut the chicken into broad flat pieces so it browns rather than steams. Halve the tomatoes and slice the garlic.
  3. Sear the chicken in the olive oil over a high flame for seven minutes, turning once, until both faces are deep brown and the meat is firm. Lift it onto a board.
  4. Drop the heat, add the garlic to the same pan for thirty seconds, then the tomatoes cut-side down for four minutes until they burst into the chicken fat.
  5. Cook the rigatoni in the boiling water until it still has a firm centre, about eleven minutes, then drain it, saving a ladleful of the water.
  6. Slice the rested chicken thickly. Toss the pasta through the tomato pan with a splash of the water, fold the chicken back in with its board juices, then grate the parmesan over and tear on the basil.
