  • 800 g Lamb shoulder
  • 200 g Yogurt
  • 3 tbsp Ghee
  • 1 Onion
  • 30 g Ginger
  • 4 cloves Garlic
  • 1 Cinnamon stick
  • 4 Green cardamom pods
  • 2 Black cardamom pods
  • 4 Whole cloves
  • 3 tsp Kashmiri chili powder
  • 2 tsp Fennel seeds
  • 2 tsp Ground coriander
  • ½ tsp Ground turmeric
  • 1 tsp Garam masala
  • 2 tsp Salt
  • 240 g Basmati rice
  • 2 Bay leaves (optional)
  • 1 pinch Asafoetida (hing) (optional)

Method

  1. Rinse the basmati rice until the water runs clear, then cook it in twice its volume of water, covered, until tender and the water is absorbed, about 15 minutes.
  2. Slice the onion thin.
  3. Whisk the yogurt smooth and let it come to room temperature.
  4. Melt the ghee in the Dutch oven over medium heat. Bloom the cinnamon, green and black cardamom, cloves, and bay leaves until fragrant, about 30 seconds.
  5. Add the onion. Cook 10 minutes until deep brown.
  6. While the onion browns, cut the lamb into 4 cm chunks (bone-in best for flavor). Pat dry.
  7. While the onion browns, grate the ginger and garlic into a paste.
  8. While the onion browns, toast the fennel seeds 30 seconds in a dry pan. Grind to a powder (mortar or spice grinder).
  9. Add the lamb. Brown all over on high heat, 8 minutes.
  10. Reduce heat. Add the ginger-garlic paste and the asafoetida. Cook 3 minutes.
  11. Stir in kashmiri chili, ground fennel, coriander powder, turmeric, and a splash of water. Cook 1 minute.
  12. Off heat (or very low), whisk in the yogurt one spoonful at a time so it doesn't split. Return to heat once incorporated.
  13. Add enough water to almost cover and season with salt. Bring to a gentle simmer, cover, and braise on low 90 minutes until the lamb pulls apart easily. Stir every 20 min.
  14. Uncover. Reduce 5 minutes if the sauce is loose. Sprinkle garam masala and stir through.
  15. Rest 5 minutes off heat. Serve with basmati rice or naan.
