- 300 g Paneer
- 500 g Spinach
- 1 Onion
- 1 Ginger
- 4 cloves Garlic
- 2 Chili
- 1 tsp Cumin seeds
- 1 tsp Garam masala
- 60 ml Heavy cream
- 3 tbsp Ghee
- 1 tsp Salt
Method
- Finely chop the onion, ginger, garlic, and chili.
- Blanch the spinach in boiling water until just wilted and bright green, then drain.
- Blend the blanched spinach to a smooth purée.
- Crackle the cumin seeds in the ghee over medium heat, then add the onion, ginger, garlic, and chili and fry until soft and golden.
- While the aromatics fry, cube the paneer.
- Stir in the spinach purée and salt and simmer gently, then fold in the paneer and cream and warm through.
- Stir in the garam masala off the heat.
- Serve with naan or rice.
