- 1 Lemon
- 0.4 tsp Salt
- 1 tbsp Extra-virgin olive oil
- 2 Scallions (optional)
Method
- Pat the fish dry, score the skin, and sprinkle with the salt.
- Grill or sear the fish in the oil, skin-side first, until the skin is crisp and the flesh cooked, about 4 minutes a side.
- Slice the scallions and scatter over; serve with lemon.
