- 55 g Japanese short-grain rice
- 120 g Shrimp
- 10 ml Toasted sesame oil
- 40 g Carrot (optional)
- 60 g Zucchini (optional)
- 5 g Sesame seeds (optional)
- 5 ml Soy sauce (optional)
- 0.15 tsp Salt (optional)
Method
- Rinse the rice in several changes of water until the water runs clear, then leave it in the sieve to drain.
- Dice the carrot and courgette as small as you can be bothered to, and chop the prawns into rough pieces.
- Toast the drained rice in the sesame oil over a medium flame until the grains turn chalk-white and the pot smells nutty.
- Pour in plenty of water and simmer, stirring whenever you pass, until the grains have burst and the pot has gone thick enough to hold the trail of a spoon.
- Stir the carrot, courgette and prawns in and cook until the prawns have turned opaque and curled.
- Off the heat, season the juk with the soy sauce and the salt.
- Ladle it into a warm bowl and crumble the sesame seeds between your fingers over the top.
