Ingredients

  • 160 g White fish fillet
  • 120 g Turnip
  • 4 g Kombu (dried kelp)
  • 4 g Katsuobushi (bonito flakes)
  • 40 g Carrot (optional)
  • 40 g Spinach (optional)
  • 15 ml Sake (optional)
  • 5 ml Japanese light soy sauce (usukuchi) (optional)
  • 2 leaves Shiso (perilla) leaves (optional)
  • 0.1 tsp Salt (optional)

Method

  1. Slide the kombu into a pot of cold water and bring it up so slowly that the surface never breaks.
  2. While the kombu steeps, peel the turnip and cut it into thick wedges, slice the carrot into thin rounds and cut the fish into two neat pieces.
  3. Lift the kombu out the moment the first threads of steam rise, scatter the bonito flakes in and let them sink, then pour the broth through a sieve without pressing them.
  4. Simmer the turnip and carrot in the clear broth until the turnip has gone translucent at the edge and matte in the middle.
  5. Lower the fish in with the sake and tuck the spinach around it, holding the pot at a shiver until the fish parts into flakes.
  6. Take the pot off the heat and season the broth with the light soy and the salt, tasting as you go.
  7. Set the fish and turnip in a lidded bowl, pour the broth down the side and float the shiso on top.
