Ingredients

  • 200 g Konjac rice
  • 150 g Salmon fillet
  • 100 g Avocado
  • 1 tsp Toasted sesame oil
  • 50 g Cucumber (optional)
  • 2 tsp Soy sauce (optional)
  • 1 tsp Rice vinegar (optional)
  • 2 g Nori sheets (optional)
  • 1 tsp Sesame seeds (optional)

Method

  1. Pat the salmon dry and season it. Slice the avocado and cut the cucumber into thin half-moons.
  2. Drain the konjac rice and rinse it thoroughly under cold running water, then dry-fry it in a hot pan for 3 minutes, shaking often, until the water has driven off and the grains squeak against the pan.
  3. Heat the sesame oil in a heavy pan over medium-high and sear the salmon for 3 minutes a side, until browned outside and just translucent at the centre.
  4. Off the heat, spoon the soy sauce and rice vinegar over the fish and let it sit in the pan for a moment to take on the seasoning.
  5. Spread the konjac rice in a shallow bowl, break the salmon over it in large flakes, and lay the avocado and cucumber alongside. Finish with torn nori and sesame seeds.
