Ingredients

  • 200 g Shrimp
  • 80 g Fennel bulb
  • 120 g Cucumber
  • 8 g Dill
  • ½ Lemon
  • 1 tsp Extra-virgin olive oil
  • ¼ tsp Black pepper (optional)

Method

  1. Shave the fennel as thinly as you can across the bulb and drop it into iced water for five minutes — it curls and turns crisp, and loses the worst of its aniseed edge.
  2. Blot the prawns dry, cut the cucumber into short batons and chop the dill.
  3. Sear the prawns in the olive oil over the highest flame, ninety seconds a side, until they curl tight and lose their grey. Tip them onto a cold plate so they stop cooking.
  4. Leave the prawns three minutes until they are no longer hot to the touch — laid on the fennel warm they would wilt it, which is the whole thing this salad is trying to avoid.
  5. Drain the fennel and pat it dry, toss it with the cucumber, lemon juice, dill and pepper, then lay the cooled prawns over the top.
