Ingredients

  • 200 g Chicken breast
  • 80 g Romaine lettuce
  • 40 g Greek yogurt
  • ½ Lemon
  • 1 tsp Extra-virgin olive oil
  • 100 g Cherry tomatoes (optional)
  • ½ tsp Dried oregano (optional)
  • 8 g Parsley (optional)

Method

  1. Open the chicken breast out flat so it cooks at one thickness and rub it with the oregano and salt.
  2. Shred the romaine, halve the tomatoes and chop the parsley. Loosen the yoghurt with the lemon juice until it pours off the spoon in a ribbon.
  3. Get a ridged pan hot with the olive oil and cook the flattened breast five minutes on the first side and three on the second, until it carries dark bars and springs back under a finger.
  4. Rest the chicken four minutes, then tear it into rough strips along the grain.
  5. Spread the lemon yoghurt across the plate, pile the romaine and tomatoes over it, lay the torn chicken on top with its juices and scatter the parsley.
