- 150 g Potatoes
- 3 Egg
- 60 g Spinach
- 8 g Dill
- ½ Lemon
- 1 tbsp Garlic-infused olive oil
- ¼ tsp Black pepper (optional)
Method
- Cut the potatoes into thick coins and boil them in salted water for fourteen minutes, until a knife slides in and out without lifting them.
- Lower the eggs into a second pan of boiling water for seven minutes, then cool them under a running tap and peel them.
- Chop the dill and whisk the garlic-infused oil into the lemon juice with the black pepper.
- Drain the potatoes and turn them through the dressing while they still steam — warm potato drinks a dressing that cold potato would simply shed. Fold the raw spinach in so it wilts in the residual heat.
- Halve the eggs over the warm potatoes so the yolks run into the dressing, and scatter the dill.
