Ingredients

  • 160 g Salmon fillet
  • 100 g Avocado
  • 80 g Fennel bulb
  • 20 g Walnuts
  • 2 tbsp Extra-virgin olive oil
  • ½ Lemon
  • 40 g Arugula (optional)

Method

  1. Shave the fennel across the bulb as thinly as you can and drop it into iced water for five minutes, until it curls and turns crisp.
  2. Roast the salmon at 200°C (400°F) for eleven minutes, until the flesh turns matt and parts under gentle pressure.
  3. Toast the walnuts in a dry pan over a medium flame for three minutes, shaking often, until they smell nutty, then tip them straight out — left in the hot pan they carry on darkening and turn bitter.
  4. Whisk the olive oil into the lemon juice until it thickens. Drain the fennel and pat it dry, then toss it with the rocket and most of the dressing. Slice the avocado only now so it keeps its colour.
  5. Break the salmon into big flakes over the leaves while it is still warm, fan the avocado alongside, crush the walnuts over in your fingers and trickle on the rest of the dressing.
