- 150 g Tuna
- 2 Egg
- 25 g Kalamata olives
- 2 tbsp Extra-virgin olive oil
- ½ Lemon
- ½ tsp Dried oregano
- 100 g Cucumber (optional)
- 40 g Arugula (optional)
Method
- Lower the eggs into boiling water and give them seven minutes for a set white and a jammy centre, then cool them under a running tap and peel them.
- Cut the cucumber into thick half-moons and pit the olives. Crush the dried oregano between your palms as it falls into the lemon juice — rubbed this way it releases far more than it does scattered whole.
- Whisk the olive oil into the oregano lemon until it thickens, then toss the cucumber and rocket through most of it.
- Flake the drained tuna over the leaves in large pieces, halve the eggs on top so the yolks stay whole until cut, scatter the olives and trickle on the rest of the dressing.
