  • 150 g Tuna
  • 2 Egg
  • 80 g Avocado
  • 2 tbsp Extra-virgin olive oil
  • ½ Lemon
  • 20 g Kalamata olives (optional)
  • 60 g Romaine lettuce (optional)
  • 8 g Parsley (optional)

Method

  1. Lower the eggs into boiling water and give them seven minutes for a set white and a jammy centre, then cool them under a running tap and peel them.
  2. Shred the romaine, pit the olives, chop the parsley and whisk the olive oil into the lemon juice until it thickens.
  3. Slice the avocado at the last moment so it keeps its colour, and turn the romaine through most of the dressing.
  4. Flake the drained tuna over the dressed leaves in large pieces, halve the eggs onto the top so the yolks stay whole until they are cut, and finish with the olives and the rest of the dressing.
