  • 3 Egg
  • 100 g Avocado
  • 40 g Bacon
  • 2 tbsp Extra-virgin olive oil
  • ½ Lemon
  • 60 g Romaine lettuce (optional)
  • ¼ tsp Black pepper (optional)

Method

  1. Lower the eggs into boiling water and give them seven minutes for a set white and a jammy centre, then cool them under a running tap and peel them.
  2. Cut the bacon into short lardons, start them in a cold pan and bring them up slowly over six minutes until the fat has run out and the pieces snap rather than bend.
  3. Shred the romaine and whisk the olive oil into the lemon juice with the black pepper. Slice the avocado at the last moment.
  4. Toss the romaine through the dressing, lay the avocado over it, halve the eggs on top so the yolks stay whole until they are cut, and scatter the bacon with a spoonful of its warm fat.
