- 1 Low-carb tortillas
- 180 g Salmon fillet
- 70 g Avocado
- 10 g Chipotles in adobo
- 1 tbsp Olive oil
- ¼ Lime
- 1 Jalapeno (optional)
- 8 g Cilantro (optional)
Method
- Blot both faces of the salmon fillet dry, then smear the chopped chipotle and the adobo clinging to it over the flesh side in an even coat.
- Crush the avocado to a rough paste with the juice of the quarter lime. Chop the coriander, cut the jalapeno into fine rings, and fold both through the paste.
- Bring a heavy pan up over medium-high with the olive oil in it and set the fillet down chipotle-side first. Four minutes for the paste to catch and darken, then turn it and give it two minutes more, until the centre has only just lost its translucence. Break the fish into large flakes in the pan.
- While the fillet is in the oil, sit the low-carb wrap on a second dry pan, a minute on each face; these are stiffer than a flour tortilla and crack along the fold if you roll them cold.
- Spread the crushed avocado across the warm wrap, lay the salmon flakes down the centre with the chipotle oil from the pan, and roll it up firmly, tucking the ends in as you go.
- Halve it and start eating now — the wrap goes soft under warm fish within a few minutes.
