Ingredients

  • 64 g Spaghetti
  • 260 g Salmon fillet
  • 350 g Spinach
  • 15 ml Garlic-infused olive oil
  • 1 tbsp Salt
  • 1 bunch Dill (optional)
  • 1 Lemon (optional)
  • ½ tsp Black pepper (optional)

Method

  1. Bring a pot of water to a boil. Salt it.
  2. Season the salmon with salt and pepper. Chop the dill.
  3. Cook the spaghetti one minute shy of al dente.
  4. While the pasta cooks, warm the garlic-infused oil in a skillet over medium-high heat. Sear the salmon skin-down 4 minutes, flip, and cook 2 minutes more until just cooked through. Lift out and flake into large pieces.
  5. Add the spinach to the same pan and toss until just wilted, about 1 minute.
  6. Reserve a mugful of pasta water, then drain.
  7. Tip the pasta into the pan with the flaked salmon, dill, and a splash of pasta water. Toss gently off heat until glossy, keeping the salmon in large flakes.
  8. Finish with a squeeze of lemon.
