- 150 g Konjac rice
- 170 g Salmon fillet
- 2 tbsp Tahini
- 1 tbsp Olive oil
- ¼ Lemon
- 50 g Spinach (optional)
- 1 tsp Ground cumin (optional)
- 1 tsp Sumac (optional)
- 8 g Parsley (optional)
Method
- Heat the oven to 200C. Pat the salmon dry and season it. Loosen the tahini with the lemon juice and a little cold water until it is thick but spreadable, and stir in the cumin.
- Set the salmon in a small dish, spread the tahini thickly over the top, and bake for 14 minutes — the crust should set firm and crack, and the fish underneath should still be just translucent at its thickest point.
- While the salmon bakes: drain the konjac rice and rinse it thoroughly under cold water, then dry-fry it in a hot pan for 3 minutes, shaking often, until the water has driven off and the grains squeak.
- Push the konjac to one side of the pan, add the olive oil and the spinach, and turn it through for a minute until it collapses.
- Spread the konjac rice and spinach on a plate and lift the salmon on top with its cracked tahini crust intact. Scatter the sumac and parsley over the top.
