  • 600 g Salmon fillet
  • 300 g Frozen peas
  • 2 Leek
  • 1 Lemon
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt
  • 2 tbsp Mint (optional)
  • 2 cloves Garlic (optional)

Method

  1. Heat the oven to 200C (400F). Slice the leeks and mince the garlic.
  2. Soften the leeks and garlic in the oil until silky, then stir in the peas and a splash of water.
  3. Tip the peas into a baking dish, sit the salmon on top, season with salt, and squeeze over half the lemon.
  4. Roast until the salmon is just cooked through, 12 minutes.
  5. Scatter the mint over and serve with the rest of the lemon.
