- 600 g Salmon fillet
- 300 g Frozen peas
- 2 Leek
- 1 Lemon
- 2 tbsp Extra-virgin olive oil
- ½ tsp Salt
- 2 tbsp Mint (optional)
- 2 cloves Garlic (optional)
Method
- Heat the oven to 200C (400F). Slice the leeks and mince the garlic.
- Soften the leeks and garlic in the oil until silky, then stir in the peas and a splash of water.
- Tip the peas into a baking dish, sit the salmon on top, season with salt, and squeeze over half the lemon.
- Roast until the salmon is just cooked through, 12 minutes.
- Scatter the mint over and serve with the rest of the lemon.
