Salt and Pepper Pork Belly Wrap

- 1 Low-carb tortillas
- 110 g Pork belly
- ¼ tsp White pepper
- ¼ tsp Five-spice powder
- ¼ tsp Salt
- 1 Chili (optional)
- 12 g Scallions (optional)
- 1 clove Garlic (optional)
- 50 g Cucumber (optional)
Method
- Cut the pork belly into slices about half a centimetre thick and dry every face of them on kitchen paper; damp pork steams itself instead of crisping.
- Stir the salt, white pepper and five-spice together in a saucer, cut the chilli into rings and the spring onion into short batons, chop the garlic, and shave the cucumber lengthways into cold ribbons.
- Lay the pork into a cold dry pan and bring it up over a medium flame; it releases its own fat within about eight minutes, and after that you keep turning the slices in that fat until the edges are brown and brittle.
- While the fat is still rendering out of the pork, warm the low-carb tortilla on a second dry ring until it drapes over your hand.
- Leave the rendered fat in the pan — it is the frying medium now — and throw the chilli, garlic and spring onion into it for half a minute, then kill the heat and shower the salt, pepper and five-spice over, tossing until it clings to every slice.
- Lay the cold cucumber ribbons down the length of the tortilla first as a barrier against the fat, pile the hot pork on top of them and roll it before the cucumber has time to wilt.
- One cut through the middle, and eat it standing up the way it is sold.
