  • 3 Bell pepper
  • 1 Onion
  • 3 cloves Garlic
  • 2 tbsp Extra-virgin olive oil
  • ¾ tsp Salt
  • 1 tsp Dried oregano (optional)

  1. Brown the sausages whole in the oil in a wide skillet over medium heat, turning to colour all sides, about 8 minutes, then set them aside — they finish cooking later.
  2. While the sausages brown, slice the peppers and onion into thick strips and thinly slice the garlic.
  3. Cook the sliced peppers and onion in the same skillet with the salt until soft and charred at the edges, about 10 minutes.
  4. Stir in the garlic, oregano, and the tomatoes if using, then return the sausages and simmer until cooked through, about 8 minutes.
  5. Pile the sausages and peppers into split rolls, or spoon over rice, with the pan juices.
