- 500 g Italian sausage
- 3 Bell pepper
- 1 Onion
- 3 cloves Garlic
- 2 tbsp Extra-virgin olive oil
- ¾ tsp Salt
- 1 tsp Dried oregano (optional)
- 200 g Canned tomatoes (optional)
Method
- Brown the sausages whole in the oil in a wide skillet over medium heat, turning to colour all sides, about 8 minutes, then set them aside — they finish cooking later.
- While the sausages brown, slice the peppers and onion into thick strips and thinly slice the garlic.
- Cook the sliced peppers and onion in the same skillet with the salt until soft and charred at the edges, about 10 minutes.
- Stir in the garlic, oregano, and the tomatoes if using, then return the sausages and simmer until cooked through, about 8 minutes.
- Pile the sausages and peppers into split rolls, or spoon over rice, with the pan juices.
