Ingredients

  • 200 g Rigatoni
  • 170 g Italian sausage
  • 190 g Chicken breast
  • 1 head Broccoli
  • 12 ml Garlic-infused olive oil
  • 30 g Parmigiano-Reggiano
  • 1 tbsp Salt
  • 3 cloves Garlic (optional)
  • ½ tsp Red pepper flakes (optional)
  • ½ tsp Black pepper (optional)

Method

  1. Bring a pot of water to a boil. Salt it.
  2. Cut the broccoli into small florets. Mince the garlic.
  3. Squeeze the sausage out of its casing and cut the chicken into bite-size pieces. Season the chicken with salt and pepper.
  4. Cook the rigatoni one minute shy of al dente, adding the broccoli florets to the pot for the final 2 minutes.
  5. While the pasta cooks, warm the garlic-infused oil in a wide skillet over medium-high heat. Brown the sausage and chicken together, breaking the sausage up, about 6 minutes.
  6. Add the garlic and red pepper flakes and cook until fragrant, about 30 seconds.
  7. Reserve a mugful of pasta water, then drain the pasta and broccoli.
  8. Tip the pasta and broccoli into the pan with a splash of pasta water. Toss off heat until glossy.
  9. Finish with the parmesan and a final crack of pepper.
