Pantry Shakshuka
Eggs poached in a spiced tomato-and-onion sauce — works with what's on the shelf.

Ingredients
- 4 Egg
- 400 g Canned tomatoes
- 1 Onion
- 3 cloves Garlic
- 1 tsp Smoked paprika
- 1 tsp Ground cumin
- 2 tbsp Extra-virgin olive oil
- 1 tsp Salt
- ¼ tsp Black pepper
- ½ tsp Red pepper flakes (optional)
Method
- Chop onion; mince garlic.
- Soften onion in oil over medium for 5 minutes. Add garlic, paprika, cumin, chili flakes; toast 1 minute.
- Pour in the tomatoes with salt and pepper. Simmer 8 minutes to thicken.
- Make 4 wells; crack an egg into each. Cover and cook on low for 5 minutes until whites set but yolks runny.
- Serve right away from the pan.
