  • 400 g Canned tomatoes
  • 1 Bell pepper
  • 1 Onion
  • 100 g Feta
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 2 tbsp Extra-virgin olive oil
  • ½ tsp Salt

Method

  1. Slice the bell pepper and onion.
  2. Soften the pepper and onion in the oil over medium heat until tender, about 6 minutes, then stir in the cumin and paprika and bloom until fragrant, about 1 minute.
  3. Add the tomatoes and salt and simmer into a thick sauce, about 8 minutes.
  4. Crumble in the feta, make wells in the sauce, crack an egg into each, cover, and cook until the whites are set, about 6 minutes.
  5. Serve from the pan with bread.
