Green Shakshuka

Ingredients
- 250 g Spinach
- 4 Egg
- 1 Onion
- 3 cloves Garlic
- 2 tbsp Extra-virgin olive oil
- ½ tsp Salt
- 1 tsp Ground cumin (optional)
- 50 g Feta (optional)
- 3 tbsp Parsley (optional)
Method
- Dice the onion and mince the garlic.
- Soften the onion in the oil over medium heat, then add the garlic and cumin for 1 minute.

- Make four wells in the greens, crack an egg into each, cover, and cook until the whites set, about 6 minutes.
