About Harissa Shakshuka

Harissa shakshuka turns up the heat on the classic by folding in harissa, the North African chili paste that gives this version its smoky, fiery character. The familiar base of onion, bell pepper, and tomato is all here, but the harissa stirred in alongside the garlic and cumin lends a depth of roasted-chili flavor and a real kick that the standard recipe holds back on. Eggs poach into the thickened sauce just as in any shakshuka, absorbing the spice around them. It's the version for cooks who want their eggs with genuine warmth.

Each bite carries the layered heat of harissa — more aromatic and complex than plain chili — balanced by the sweetness of the peppers and the acidity of the tomatoes. Building the sauce until it's thick enough to cradle the eggs ensures the whites set cleanly while the yolks stay runny to soften the spice. Cilantro scattered over the finished pan adds a fresh, citrusy counterpoint to the smoky base. Serve it hot from the skillet with bread to temper the heat and soak up the sauce; it makes a bold, satisfying brunch or a quick spiced supper.
