  • 3 Potatoes
  • 2 Bell pepper
  • 1 Onion
  • 3 tbsp Extra-virgin olive oil
  • 1 tsp Salt

Method

  1. Heat the oven to 210°C (410°F).
  2. Chunk the potatoes into bite-size pieces.
  3. Slice the peppers into strips and the onion into thick wedges.
  4. Smash the garlic cloves and leave them whole.
  5. Toss the potatoes, peppers, onion, and garlic on the tray with the oil, oregano, salt, and pepper, then spread in one layer.
  6. Nestle the whole sausages among the vegetables.
  7. Roast 20 minutes, then turn the sausages and stir the vegetables.
  8. Roast until the sausages are browned and cooked through and the potatoes are crisp-edged, about 15 minutes more.
