  • 200 g Konjac rice
  • 200 g Chicken thighs
  • 1 tbsp Tahini
  • 2 tbsp Olive oil
  • ½ Lemon
  • 25 g Yogurt (optional)
  • 25 g Cucumber (optional)
  • 1 tsp Sumac (optional)
  • 8 g Parsley (optional)

Method

  1. Cut the chicken thighs into large pieces and turn them through the yoghurt, the lemon juice, salt and pepper. Leave them to sit while everything else is prepared.
  2. Drain the konjac rice and rinse it thoroughly under cold water, then dry-fry it in a hot pan for 3 minutes, shaking often, until the water has driven off and the grains squeak.
  3. Loosen the tahini with cold water a spoonful at a time until it turns pale and pourable. Dice the cucumber and chop the parsley.
  4. Get a heavy pan very hot with the olive oil and cook the chicken in a single layer for 8 minutes, turning once, until the yoghurt marinade has charred in patches and the meat is cooked through.
  5. Spread the konjac rice on a plate, pile the charred chicken over it with the pan oil, then spoon the tahini sauce across. Scatter the cucumber, parsley and sumac.
