- 70 g Japanese short-grain rice
- 160 g White fish fillet
- 100 g Daikon radish
- 12 g Ginger
- 60 g Carrot (optional)
- 3 g Kombu (dried kelp) (optional)
- 1 tsp Soy sauce (optional)
- 1 tsp Toasted sesame oil (optional)
Method
- Rinse the rice until the water runs clear, then cook it in one and a quarter times its volume of water, covered, until the water is absorbed, about 18 minutes.
- While the rice cooks: peel the daikon and carrot and cut both into thick half-moons. Cut the ginger into fine matchsticks.
- Put the kombu in a pan with the daikon, carrot and just enough water to cover. Bring to a bare simmer and cook for 10 minutes, until the daikon turns translucent at the edges.
- Lay the fish on top of the vegetables, scatter over half the ginger, cover the pan and steam for 7 minutes, until the fish is opaque through and flakes at a gentle push.
- Warm the sesame oil with the remaining ginger for 30 seconds until it just sizzles, then take it off the heat and stir in the soy sauce.
- Fluff the rice into a bowl and lift the fish and vegetables alongside with a ladle of their kombu broth. Spoon the warm ginger oil over the fish.
