- 80 g Linguine
- 400 g Shrimp
- 400 g Cherry tomatoes
- 12 ml Garlic-infused olive oil
- 1 tbsp Salt
- 2 Chili (optional)
- 2 cloves Garlic (optional)
- 3 tbsp Parsley (optional)
- ½ tsp Black pepper (optional)
Method
- Bring a pot of water to a boil. Salt it.
- Halve the cherry tomatoes, slice the chilli thin, mince the garlic, and chop the parsley.
- Pat the shrimp dry and season with salt and pepper.
- Cook the linguine one minute shy of al dente.
- While the pasta cooks, warm the garlic-infused oil in a wide skillet over medium heat with the garlic and chilli until fragrant, about 1 minute. Add the shrimp and cook until just pink, about 2 minutes, then lift them out onto a plate.
- Add the cherry tomatoes to the same pan and cook until they blister and slump into a rough sauce, about 4 minutes.
- Reserve a mugful of pasta water, then drain.
- Return the shrimp to the pan with the pasta and a splash of pasta water. Toss off heat until glossy.
- Finish with the parsley.
