  • 200 g Shrimp
  • 2 Egg
  • 80 g Snow peas
  • 3 Scallions
  • 2 tbsp Light soy sauce
  • 2 tbsp Neutral oil
  • ½ tsp Salt
  • 1 tsp Toasted sesame oil (optional)

Method

  1. Beat the eggs and slice the snow peas and scallions.
  2. Scramble the egg in hot oil and set aside, then stir-fry the shrimp until pink.
  3. Add the rice and snow peas and toss until hot, seasoning with the soy and salt.
  4. Off the heat, finish with the sesame oil and scallions.
