  • 64 g Spaghetti
  • 300 g Shrimp
  • 5 Zucchini
  • 40 ml Garlic-infused olive oil
  • 1 Lemon
  • 1 tbsp Salt
  • 1 Chili (optional)
  • 3 tbsp Parsley (optional)
  • ½ tsp Black pepper (optional)

Method

  1. Bring a pot of water to a boil. Salt it.
  2. Peel the zucchini into long ribbons with a vegetable peeler, stopping at the seedy core. Slice the chilli thin and chop the parsley.
  3. Pat the shrimp dry and zest the lemon.
  4. Drop the spaghetti and cook one minute shy of al dente.
  5. While the pasta cooks, warm the garlic-infused oil in a wide skillet over medium heat with the chilli. Add the shrimp and cook until just pink, about 2 minutes, then lift them out onto a plate.
  6. Add the zucchini ribbons to the same pan and toss over high heat until just wilted, about 2 minutes.
  7. Reserve a mugful of pasta water, then drain.
  8. Return the shrimp to the pan with the pasta, lemon zest, and a splash of pasta water. Toss off heat until glossy.
  9. Finish with the parsley, black pepper, and a squeeze of lemon juice.
