Silky Egg and Shrimp Burrito

- 1 Whole wheat tortillas
- 200 g Shrimp
- 3 Egg
- ½ tsp White pepper
- 1 tsp Soy sauce
- 1½ tbsp Neutral oil
- 20 g Scallions (optional)
- ½ Green bell pepper (optional)
- 6 g Ginger (optional)
- 2 tsp Shaoxing wine (optional)
Method
- Peel the prawns and run a knife down each back to lift the vein out, then toss them with the Shaoxing, the grated ginger and the white pepper.
- Beat the three eggs with the soy until not one streak of white is left, and cut the spring onions and green pepper as thin as your knife allows.
- Bring the oil up until it shimmers and slide the prawns in — ninety seconds a side is enough, until they curl and turn opaque — then lift them out and park them.
- While the prawns sear, set the wholewheat tortilla over a second low dry ring until it steams faintly and softens. Warm it now — once the egg is made there is no minute to spare for it.
- Drop the heat right down, soften the spring onion and green pepper in the same oil for a minute, pour the eggs in and drag them slowly across the base; take the pan off while they are still visibly wet and fold the prawns back through the curds.
- Tip the whole soft mass along the middle of the tortilla, turn the ends over it and roll firmly enough to hold without pressing the egg out of the sides.
- Eat it there and then — slippery egg turns rubbery the moment it is left standing.
