About Smashed Potatoes with Paprika Butter

Smashed potatoes are a modern side dish that splits the difference between a boiled potato and a roast one: small potatoes are first simmered until tender, then flattened and roasted so they crisp at the edges while staying fluffy inside. The technique is straightforward but produces a lot of surface area, which is where all the crunch and browning happen. These are finished with a paprika-garlic butter, giving them a smoky, aromatic edge that plainer roast potatoes lack.

The two-stage cooking is what makes this version worth the effort. Boiling in salted water seasons the potatoes through and cooks them soft, and pressing each one flat with the base of a glass before a hot 230C roast maximizes the crisp, golden edges. Melting smoked paprika and minced garlic gently into butter, without browning it, keeps the spice sweet and the garlic mellow so it perfumes rather than bites. The result is vegetarian, generous, and adaptable, equally at home next to roast chicken, grilled fish, or a weekend brunch spread, and best served hot straight from the tray.
