Ingredients

  • 100 g Avocado
  • 60 ml Heavy cream
  • ½ Lime
  • 0.1 tsp Salt
  • 40 g Cucumber (optional)
  • 1 Serrano chilies (optional)
  • 8 g Cilantro (optional)
  • 20 g Pumpkin seeds (pepitas) (optional)

Method

  1. Halve the avocado and spoon the flesh out, peel and roughly dice the cucumber, scrape the seeds from the chilli and squeeze the lime.
  2. Blend the avocado, cucumber, chilli, lime juice, cream and salt with enough iced water to loosen it, stopping when the soup is pale green with no fleck left in it.
  3. Press a sheet of film onto the surface and chill it right down, since the soup tastes flat while it is still cool rather than cold.
  4. Toast the pumpkin seeds dry in a small pan, shaking them constantly, until they swell and start snapping against the sides.
  5. Pour the cold soup into a chilled bowl and scatter the pepitas and torn coriander over it.
