About Leek and Potato Soup
Leek and potato soup, soupe aux poireaux, is one of the quiet classics of French cooking, a two-vegetable partnership so balanced it barely needs anything else. Leeks give it a delicate, sweet onion perfume while potatoes lend the body and the smooth, starchy thickness that makes the soup feel luxurious once blended. Cooking the leeks slowly in butter over low heat until soft but never browned is the whole secret, as any color would muddy the pale, gentle flavor the dish is prized for. A little cream stirred in at the end rounds it into something silky and comforting.
Its great trick is versatility: served hot it is soothing and homely, but chilled and enriched it becomes vichyssoise, the famous cold summer soup. The taste is mellow and clean, sweet leek against creamy potato, brightened at the end with a scatter of chives. It comes together in about thirty-five minutes and asks almost nothing of the cook beyond patience with the low heat. Serve it hot in cold weather with crusty bread, or chill it well and serve in small cups as an elegant warm-weather starter.
