Sourdough Marinara with Chicken
Toasted sourdough under a fresh cherry-tomato marinara

Ingredients
- 2 slices Country bread
- 150 g Chicken breast
- 250 g Cherry tomatoes
- 3 cloves Garlic
- 2 tbsp Extra-virgin olive oil
- ½ tsp Salt
- 6 leaves Basil (optional)
- 20 g Parmigiano-Reggiano (optional)
- 40 g Cheddar cheese (optional)
- ½ tsp Dried oregano (optional)
- 1 g Red pepper flakes (optional)
- 1 g Black pepper (optional)
Method
- Cut the chicken breast into bite-sized chunks and toss with a tablespoon of the olive oil, the dried oregano, salt and black pepper.
- Leave the chicken to marinate while you get everything else ready.
- Halve the cherry tomatoes and finely chop the garlic.
- Warm a tablespoon of olive oil in a pan over medium heat and soften the garlic and red pepper flakes for a few seconds until fragrant. Add most of the halved tomatoes with a pinch of salt and simmer, crushing them down with occasional stirring, until they collapse into a loose sauce, about 8 minutes. Stir in the torn basil at the end.
- Cook the marinated chicken in a hot dry pan over medium-high heat, flipping once, until golden and cooked through to 74C/165F, about 8 minutes.
- Rest the chicken for a minute or two off the heat.
- Slice the sourdough.
- Toast the sourdough in a dry skillet until golden on both sides, then lay the cheddar over the top and let it soften in the residual heat.
- Spoon the hot marinara over the cheese-topped toast so it melts through, scatter the reserved raw cherry tomatoes and grated Parmigiano on top, and serve with the chicken alongside.
