  • 3 Scallions
  • 2 tbsp Light soy sauce
  • 1 tbsp Dark soy sauce
  • 2 tbsp Neutral oil
  • 1 tsp Sugar
  • 1 tbsp Oyster sauce (optional)
  • 1 tsp Toasted sesame oil (optional)

Method

  1. Slice the scallions into lengths and whisk the light soy, dark soy, sesame oil, and sugar into a sauce.
  2. Boil the noodles until just tender, then drain well.
  3. Toss the drained noodles in hot oil over high heat until lightly toasted.
  4. Add the bean sprouts and the sauce and toss until everything is glossy and hot.
  5. Pile into bowls and serve.
