Ingredients

  • 100 g Spaghetti
  • 220 g Beef sirloin
  • 120 g Cherry tomatoes
  • 2 cloves Garlic
  • 2 tsp Extra-virgin olive oil
  • 20 g Parmigiano-Reggiano (optional)
  • 8 g Basil (optional)

Method

  1. Bring a pot of water to a boil and salt it.
  2. Take the sirloin out of the fridge and season it hard. Halve the tomatoes and slice the garlic.
  3. Sear the sirloin in the olive oil over the highest flame, three minutes a side for rare, then move it to a board to rest.
  4. Drop the heat, add the garlic to the beef fat for thirty seconds, then the tomatoes cut-side down for four minutes until they burst and pick up everything left in the pan.
  5. Cook the spaghetti in the boiling water until it still has a firm centre, about eight minutes, then drain it, saving a ladleful of the water.
  6. Toss the pasta through the tomato pan with a splash of the water, slice the rested beef thinly across the grain and lay it over with the board juices, then grate the parmesan and tear the basil on top.
