  • 70 g Spaghetti
  • 190 g Tuna
  • 130 g Zucchini
  • 25 g Kalamata olives
  • ½ Lemon
  • 2 tsp Garlic-infused olive oil
  • 8 g Parsley (optional)

Method

  1. Bring a pot of water to a boil and salt it.
  2. Cut the courgette into thin half-moons, tear the olives off their stones in halves and chop the parsley. Drain the tuna.
  3. Cook the courgette in the garlic-infused oil over a medium flame for seven minutes, pressing it down now and then, until it softens and breaks into a loose sauce. Stir the olives through and kill the heat.
  4. Cook the spaghetti in the boiling water until it still has a firm centre, about eight minutes. Drain, saving a ladleful of the water.
  5. Toss the pasta through the pan with a splash of the water until the courgette clings, then flake the tuna over in large pieces and fold it through once only. Squeeze in the lemon and scatter the parsley.
