About Spanakorizo (Greek Spinach Rice)

This Mediterranean take on spanakorizo is a lemony rice cooked with spinach, dill, and olive oil, streamlined into a quick one-pot that captures the spirit of the Greek original with minimal fuss. Rooted in the region's tradition of pairing rice with seasonal greens and plenty of good oil, it is the kind of light, plant-based dish that feels wholesome without being heavy. Softening the onion first builds a gentle sweetness, the spinach wilts straight into the pot, and the rice simmers in vegetable stock until it is tender and the liquid has been absorbed.

The eating experience is soft, savoury, and bright, the stock giving the rice more depth than water alone while lemon juice stirred in at the end lifts everything with a clean, tart edge. Fresh dill folded through off the heat lends the characteristic grassy, anise-like note that marks the dish as unmistakably Greek in inspiration. Ready in about half an hour and naturally vegan, it makes an easy light meal or a satisfying side beside grilled vegetables, fish, or a simple salad. Its lightness and freshness make it a good choice when you want something green and comforting without much richness.
