Wilted spinach and briny feta folded into soft eggs — a Greek diner classic at home.

Ingredients
- 3 Egg
- 60 g Spinach
- 40 g Feta
- 1 tbsp Extra-virgin olive oil
- ¼ tsp Salt
- ¼ tsp Black pepper (optional)
Method
- Crack the eggs into a bowl and add the salt.
- Beat the eggs with a fork until smooth and uniform.
- Heat the olive oil in a nonstick skillet over medium heat until it shimmers.
- Add the spinach with a pinch of the pepper and toss until wilted and dry, about 2 minutes.
- Push the wilted spinach to one side, then pour in the beaten eggs and tilt the pan to coat the base.
- Drag the set edges inward and tilt so the raw egg runs underneath, until the top is just barely wet.
- Crumble the feta over one half of the omelette.
- Fold the omelette closed over the feta and cook 30 seconds more until the cheese softens.
- Slide the omelette onto a plate and eat while the cheese is still soft.

About Spinach & Feta Omelette
The spinach and feta omelette is a Greek take on the classic folded egg dish, pairing wilted greens with the briny, crumbly cheese that defines so much of the country's cooking. It's essentially a diner and home-kitchen staple, the sort of thing you make for one in a matter of minutes, and its appeal lies in the interplay between soft, custardy egg and sharp, salty feta. Wilting the spinach first and cooking off its moisture is the detail that keeps the finished omelette from turning watery.
Made well, it's tender rather than rubbery — the trick is dragging the set edges inward and letting the raw egg run underneath, then folding it while the top is still barely wet so it finishes gently in its own heat. Olive oil rather than butter keeps it in a Mediterranean register, and a grind of black pepper cuts the richness of the eggs. It's a fast, high-protein, low-carb breakfast that needs nothing more than a slice of toast or a tomato on the side, though it's just as good for a light lunch or a quick dinner. With only a handful of ingredients, it lives or dies on technique, which makes it a satisfying one to get right.
