Steak and Egg Breakfast Burrito

Ingredients

  • 1 Whole wheat tortillas
  • 200 g Beef sirloin
  • 2 Egg
  • 150 g Potatoes
  • 1 tbsp Olive oil
  • 80 g Bell pepper (optional)
  • 30 g Monterey Jack (optional)
  • 1 tsp Smoked paprika (optional)

Method

  1. Dice the potato and cut the pepper into squares of roughly the same size, so the two cook at the same rate. Slice the sirloin thinly against the grain and rub the smoked paprika through it.
  2. Fry the potato and pepper in half the olive oil over a medium heat for fourteen minutes, stirring only now and then, until the potato is soft inside and blistered outside.
  3. Push the potatoes to the rim of the pan, turn the heat up and lay the sliced sirloin into the bare middle. Give it two minutes, turning once — thin slices need no longer, and they finish cooking in the egg.
  4. Beat the eggs, pour them over the whole pan and stir gently until they set in ribbons around the steak and potatoes, then lay the Monterey Jack on top and let the pan's own heat melt it.
  5. As the eggs set, soften the tortilla in a second dry pan for a minute a side — it has a lot to carry and a stiff one will split down the seam.
  6. Tip the steak, egg and potato along the middle of the warm tortilla, fold the sides in and roll it into a firm log.
  7. Set the burrito seam-down in the rest of the olive oil over a medium heat and press it for three minutes a side, until the wholewheat has browned and gone crackly.
  8. Let it stand a minute so the filling settles, then cut it in half and serve.
