Steak Frites
Seared steak with crisp fries and herb butter.

Ingredients
- 400 g Beef flank steak
- 600 g Potatoes
- 50 g Butter
- 2 cloves Garlic
- 400 ml Neutral oil
- 1 tsp Salt
- ½ tsp Black pepper
- 3 tbsp Parsley (optional)
Method
- Cut the potatoes into 1 cm chips. Rinse under cold water and pat thoroughly dry.
- Mash the butter with the chopped parsley and minced garlic and set aside.
- Heat the neutral oil in a deep pot. Fry the chips until golden and crisp, about 14 minutes, then drain on paper and toss with the salt.
- Season the steak with the black pepper and sear in a hot pan until a deep crust forms, about 3 minutes per side. Rest it on a board.
- Slice the rested steak against the grain and top with the herb butter. Serve with the frites.
