- 400 g Button mushrooms
- 80 g Breadcrumbs
- 40 g Hard cheese
- 3 cloves Garlic
- 3 tbsp Extra-virgin olive oil
- ½ tsp Salt
- 3 tbsp Parsley (optional)
- ½ tsp Black pepper (optional)
Method
- Heat the oven to 200°C (400°F).
- Twist the stems out of the button mushroom caps and set the caps aside.
- Chop the mushroom stems, garlic, and parsley finely.
- Sauté the chopped stems and garlic in half the olive oil in a skillet over medium until the moisture cooks off.
- Off the heat, stir the breadcrumbs, grated cheese, parsley, salt, and pepper into the pan until the stuffing clumps when squeezed.
- Arrange the caps hollow-side up on a tray and fill each generously with the stuffing.
- Drizzle the filled caps with the remaining olive oil.
- Bake the mushrooms until the caps are tender and the tops are deep golden.
- Rest the mushrooms 3 minutes and serve warm.
